There is a lot to love about this classic summer dish: namely its combination of salty, sour and sweet. It is a great accompaniment to any meal, from grilled meats and cheeses to pasta and pizza.
First – the sour: Take some fresh tomatoes and soak them in a bowl of boiling water for about 10 minutes until softened. Then drain them and put them in a pot to simmer on low heat.
Second – the sweet: Add some honey to the sour mixture and let it simmer for another 5 minutes until softened. Then remove the pot from the heat and toss in a handful of hazelnuts for extra crunch.
Finally – the tasty: Place the cooked vegetables in a large bowl and toss with a bit of olive oil, lemon juice and chives to taste. This is an ideal accompaniment to any meal and it has a number of health benefits.
